Apex Line – Gyuto
The Gyuto is the Japanese chef’s knife, with a longer blade and gentle curve that handles everything from proteins to vegetables and anything in between. It’s a powerful all-rounder and the go-to knife for tackling big prep tasks. Each blade is made from Takefu Aogami Super steel, clad in stainless steel for protection, with a forged distal taper. Handles combine a brass ferrule with stabilized, locally sourced walnut for balance, durability, and timeless feel.

Materials
Japanese san-mai steel (aogami-super carbon steel core with stainless steel cladding, from Takefu), locally harvested and professionally stabilized walnut handle, brass ferrule.
Care & Use
Aogami Super is a high-carbon steel. It will naturally develop a patina with use. As with all our knives, hand-wash only and dry promptly after each use, and avoid leaving it wet or in contact with acidic foods for long periods. With simple care, the blade will last a lifetime.
